    Champagne Ployez-Jacquemart is a family Champagne House founded in Ludes, a Premier Cru village in the heart of the Montagne de Reims, in 1930. The couple who founded the House, Marcel Ployez and Yvonne Jacquemart, built their dream, their “idea of Champagne” around two fundamental principles that are still followed today:

    Safeguarding the freshness and minerality of the wine using a conservation method like no other: storing and ageing the bottles « sur pointe », the final link in a rigorous and precise technical chain.

    The wines are blended very lightly, in Extra Brut quality, to allow the natural fruitiness and authentic, intimate personality of each champagne in the range to express themselves.

    But to do this, you need to work on exceptional terroirs.

    Maison Ployez-Jacquemart has a 3-hectare vineyard on the terroirs of Ludes, Ville-Dommange, Mailly Champagne and Vertus, which are Premiers and Grands Crus, allowing us to masterfully work the region’s 3 emblematic grape varieties, Chardonnay, Pinot Noir and Meunier. The care taken in working the vines and the quest for quality can go as far as green harvesting if necessary, to improve the quality of the harvest. The Ployez-Jacquemart vineyard is certified HVE (High Environmental Value) and VDC (Viticulture Durable en Champagne).

     

    Ludes and Ville – Dommange: The commune of Ludes lies on a hillside, with the Montagne de Reims forest to the south. The commune of Ville-Dommange also offers beautiful hillsides. These two terroirs are both composed of Pinot Noir and Meunier grapes, which make up a large proportion of Ployez’s blends. Maison Ployez-Jacquemart also owns plots of Chardonnay in Ludes.

     

    Vertus: A terroir where Chardonnay is king, this grape variety is essential to the winemaking process of Ployez-Jacquemart cuvées, as it ensures balance and freshness in the range’s blends.

    The cherished plot in the heart of Ployez-Jacquemart

    La Parcelle dear to de Ployez-Jacquemart – AB 390: This plot, isolated from the rest of the Ployez-Jacquemart vineyard, lies just behind the family home and offers a special, unique character to the grapes that grow here. It was named to correspond to the cadastral inscription of the vineyard parcel. This terroir is planted with the Meunier grape, a black variety emblematic of the Montagne de Reims region. It’s a grape that resists winter frosts and thrives in moist, clayey soils, a grape that’s a pleasure to work with. The House recognizes this grape variety and has dedicated an entire parcel cuvée to it: AB390 Vintage 2016 100% Meunier.

    The notion of terroir is very important to Champagne Ployez-Jacquemart. It’s the soil that gives the grapes their identity and enables us to offer an exceptional champagne. Sourcing is therefore crucial. Champagne Ployez-Jacquemart can rely on its own vineyards, but also on supplies from carefully selected partner winemakers, who have often become friends rather than professional relations, so important is the passion for cultivating a unique terroir in the service of a unique champagne to everyone involved in Champagne Ployez-Jacquemart. In addition to our own vineyards, the harvest is supplemented by a supply of Chardonnay and Pinot Noir from the Montagne de Reims and the Côte des Blancs, sourced from winegrowers with whom we have long-standing relationships.

    These partner winegrowers are also almost all HVE, VDC or Organic certified, as they all share the same rigorous environmental and quality approach as Champagne Ployez-Jacquemart.

    The importance of fruit

    Champagne Ployez-Jacquemart is made according to the strictest rules in order to extract the best from the fruit: hand-picking, sorting by grape variety, cru and parcel, two systematic settlings of all the grape musts before fermentation, numerous rackings in the tank to ensure good oxygenation, and light filtration for wines made in vats but none for wines made in barrels.

    Champagne is made using a family method that prioritises quality, at the cost of processes that are more costly in terms of time, storage space and expertise. The vast majority of the cuvées are aged « sur pointe ». The great strength of Ployez-Jacquemart winemaking is its respect for the fruit.
